Easy Italian pasta salad

It’s summer and I don’t know about you, but I need some new recipes for picnics, barbecues and camping! My husband and I recently went camping for his birthday (while the kids were in camp) and when I was thinking about what food to pack, I longed for something new and different. So I threw together a lot of delicious ingredients to create this hearty, tasty and easy recipe for an Italian pasta salad.

I think it’s safe to say that this is currently one of my favorite pasta salads … and its consumption on the river has quite likely made it taste even better than usual! How I love summer activities, especially when they include water. 🙂

Ingredients

For pasta salad

  • 8 ounces wholemeal pasta, cooked according to the instructions of the package (penne shape or similar)
  • 8 ounces Cherry tomatoes, in half
  • 2 cups mixed greens, (salad mix, spinach or arugula), chopped
  • 3/4 cup Cheddar, cut into small cubes (about 4 ounces)
  • 1/2 cup boneless Mediterranean olives, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 Red onion, diced
  • 2 ounces sliced ​​salami, chopped

Instructions

  1. In a large bowl, mix the cooked pasta, tomatoes, greens, cheese cubes, olives, basil, red onion and salami.

  2. Combine the ingredients in a small container with a tight-fitting lid. Shake to emulsify and mix in the pasta salad until well coated. Serve immediately or store in the refrigerator for up to 3 to 4 days.
